Lamb
Because we farm for flavor, we choose to raise the Dorper breed of lamb for the table. People often proclaim that they don’t like the mutton flavor of lamb and consequently avoid it. The mutton flavor occurs because of the lanolin in the wool. Wool breeds of sheep are notoriously mutton flavored where as sheep with a hair breed background such as the Dorpers do not put the mutton flavor in the meat and in fact, often have slightly sweeter notes.
The Dorper breed of sheep is unique in that it combines the best of the both worlds because it combines the hardiness and flavor of a hair sheep breed with the big meaty frame and fast growth rate of a woolen meat breed of sheep. The result: Big meaty carcass without the mutton flavor from wool. Dorpers are notorious for their soft meat flavor and large dinner plate quantities. All our lamb is grass fed with minimal veterinary intervention and no antibiotics, hormones, etc.

Over the last few months, we've seen an increase in the number of people wanting to jump into raising livestock and specifically raising chickens. We think this is a mostly good thing- with a few exceptions such as folks not really having any idea about basic animal care, food safety, etc. Additionally, maintaining a high quality of product in this nascent field is important to us.
